From the kitchens of Israel to the streets of Manhattan — and now to Dunwoody, Georgia. Forty years of one man's love for this food.
Haim Javits began his career in the restaurant industry in Israel in 1986. For four years, he cooked, learned, and built a foundation in the ingredients and techniques that have defined Mediterranean cuisine for generations.
In 1990, he moved to the United States with his wife Shoshi — whose quiet, steady support has been the constant behind everything he has built. Two years after arriving, Haim opened two restaurants in Manhattan: Ma Bapita near Madison Square Garden, and a second location in the West Village, Chelsea. New York in the early nineties was a city of ambition, and Haim brought his hummus and falafel into the heart of it.
Two restaurants in Manhattan. Forty years of craft. One goal — food that tastes exactly the way it should.
Eventually, Haim and his family relocated to Atlanta, where he returned to his deepest passion — the food that had started it all. Hummus. Falafel. The honest, slow, careful cooking that does not need shortcuts because it has never needed them.
Hummus Village is not a concept. It is a continuation of everything Haim has learned.
Today, Haim is returning to the restaurant industry with Hummus Village in Dunwoody. He adds a special touch of passion to every dish — not as a phrase, but as a practice consistent for over forty years.
